When selecting ribs for a
barbecue, there are different cuts that you can puchase from your local
grocery store and butcher. We prefer a good qulaity rack of pork spare
ribs. Apply an even layer of TWO DOGGS DRY RUB to the rack of ribs. Apply
the rub to the meat side of the rib only. The underside of the rib has
a film that seals in the moisture. Cook with meat side up for 2-3 hours
at 225 degrees. Pull the ribs and wrap in heavy duty aluminum foil to finish
cooking the ribs 4-6 hours until tender. Pull ribs and take to cutting
board. Sharpen your knife and you are ready to slice your rack of ribs.
Follow the rib bone with your knife to achieve a good looking cut.
